Loaded Potato Ranch Chicken Casserole


Ingredients
  • 1 (1.5 lb) bag Baby Boomer Little Potatoes
  • 2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • salt & pepper, to taste
  • 1/2 cup prepared ranch dressing, divided use
  • 2 cups Mexican Cheese Blend
  • 1 cup cooked and crumbled bacon
  • 1/2 cup diced green onion


Instructions
  1. Preheat oven to 450f.
  2. Spray a 9 x 13 baking dish with nonstick cooking spray.
  3. Dice the Little Potatoes into 1-inch cubes.
  4. In a large bowl mix together the diced potatoes, salt & pepper and 1/4 cup ranch dressing.
  5. Scoop the potatoes into prepared baking dish (save that bowl, we're going to use it again for the chicken.)
  6. Bake the potatoes for 30 minutes, stirring every 10 minutes, until almost thoroughly cooked (they won't be fork tender quite yet.).
  7. While the potatoes are cooking, add the cubed chicken to the bowl you used to the potatoes and add salt and pepper and the remaining 1/4 cup ranch seasoning.
  8. Once the potatoes have cooked 30 minutes, remove baking dish from the oven and lower the oven temperature to 400F.
  9. Top the cooked potatoes with the raw marinated chicken.
  10. Cover the baking dish with aluminum foil (Warning: Baking dish will be VERY hot so use oven mitts to do this.)
  11. Place baking dish back in the oven and cook for an additional 20 minutes (or until chicken is fully cooked.)
  12. Take baking dish out of the oven and top with shredded cheese, bacon and green onion.
  13. Place back in oven for 8-10 minutes until cheese is melted and bubbly.

Peanut Butter Pretzels

Ingredients 1 12- oz bag white chocolate chips 1/3 cup creamy peanut butter 2-3 cups mini pretzels 1/4 cup semi-sweet chocolate chips for drizzling OR 2 TBSP chocolate jimmies for sprinkling Instructions Line a cookie sheet with parchment paper. Set aside. Place white chocolate chips in a glass or ceramic bowl and microwave for 1 minute. Add 1/3 cup peanut butter to the bowl and microwave for an additional 30 seconds. Stir until smooth. Ingredients 1 cup butter softened 1 cup sugar 2/3 cup brown sugar 2 eggs 1 teaspoon vanilla 3 1/4 cups flour 4 packages or 3/4 cups hot cocoa mix - NOT SUGAR FREE VERSIONS 1 teaspoon salt 1 teaspoon baking soda 2 teaspoon baking powder 1 cup chocolate chips 1 cup Mallow Bits mini marshmallows do not work the same and can be a bit of a sticky mess Instructions Beat butter and sugars in large bowl with standing mixer until light and fluffy.
